Happy November everyone. As I sit here writing and watching the falling leaves, and the aroma of pumpkin gems in the oven wafts through the kitchen into my office, I am reminded again of how truly blessed I am. So, in honor of Thanksgiving, I’m offering two things today.
The first is the pumpkin gem recipe that is so simple and easy to make, the second is the gift certificates we are offering through the studio this month.
Pumpin Gems: You will need 1 yellow cake mix, 1 can of pumpkin, 3 eggs, 1/2 cup of oil, 1 teaspoon of baking soda and 2 teaspoons of cinnamon. That’s it!
Mix everything together and then pull out your mini muffin tin and spray lightly with canola oil. Fill the cups up and bake at 350 for 15 minutes. If you wish, frost them with cream cheese frosting when they cool.
My family loves them plain and they do not last very long. Perfect for a small snack or something to send to school with your kids.
